Raisin Bran Muffins and a Revolving Door
Living in a college town, there are always people coming and going. On football game weekends, the Campbell Inn is often full. The porch light is always on for whoever may show up. Sometimes it's a golf team from out of state looking for a place to rest; or a missionary headed through town, visiting our church; or a lonely student who just needs a family for a few days; or someone in the middle of a crisis, needing help. Our home had a revolving door, and that continues even today!
One of the best breakfast recipes to to prepare ahead to have on hand is Raisin Bran Muffins. This batter can be made ahead and stored in the refrigerator for up to 6 weeks.
Ingredients:
1. Mix together flour, sugar, baking soda, and salt in a large mixing bowl.
2. Stir in cereal.
3. Add buttermilk, oil and eggs, mixing until dry ingredients are moistened. DO NOT STIR BATTER AGAIN.
4. Batter may be stored in the refrigerator in a non-metal container for up to 6 weeks.
5. Bake at 400 degrees in greased muffin tins for 15-20 minutes.
6. The batter is best made at least the evening before you plan to bake them!

Yep - your mom gave me that recipe about 20 years ago or so, and we've had our share of raisin bran muffins over the years. And not long ago, ML said "When are you going to make some of Gretchen Campbell's yeast biscuits again?" Another post idea. . .
ReplyDeleteYou might need to re-share the biscuit recipe. The last couple of times we have tried them, we have struggled to have great success :). Maybe it was the yeast?
ReplyDeleteI'll make a batch soon - maybe for ML's birthday dinner next week - and if they turn out well, will take pictures. :-)
