Friend Friday: Fences and Neighbors {Lisa's Strawberry Pie}

By Every Tradition · Every Tradition

They say that fences make good neighbors. However, they have NOT met the families that live on the cul-de-sac we grew up on. Soon after we moved into the current Campbell home, we were blessed with new neighbors moving in across the street. They quickly made it to our list of unofficial, official family. We have enjoyed many special times over the years. On Christmas Eve, we always "feed the reindeer" and on Christmas morning, you will find all of the Campbells at the Bundrick house. Saturdays afford an occasional big breakfast all together, complete with all things Southern (ie. grits, country ham, etc.). We have shared many joys, some sorrows and countless memories over the years!

And so today, we are sharing Lisa Bundrick's strawberry pie recipe (which originally came from her mom). Maybe your neighbors are not family, or maybe you live in a fences make good neighbors type of situation. How about making two of these pies...enjoy one and share one.

Lisa's Strawberry Pie
Ingredients
  • 1 c water
  • 3 Tbsp strawberry Jell-O
  • 3 Tbsp cornstarch
  • 1 c sugar
  • 1 pint strawberries, washed and dried
  • 1 prepared graham cracker crust
  • 1 small container whipped topping
Instructions
  1. Combine water, Jell-O, cornstarch and sugar in a small pan.
  2. Cook over medium heat, stirring constantly until thickened.
  3. Remove stems from strawberries.
  4. Arrange strawberries in pie crust (can leave whole or cut in half).
  5. Pour the thickened mixture over the strawberries.
  6. Chill in the refrigerator.
  7. Top with whipped topping when ready to serve.
In the photo above, I used my Grandmother's butter crust in place of the graham crust.
