Pimento Cheese, Please

By Every Tradition · Every Tradition
Pimento cheese spread. It’s a Southern thing. Tailgates, showers, receptions, luncheons. This tasty spread brings a little color to the table.  In our family, pimento cheese is a staple item on the fall tailgating menu. Everyone has their own recipe and secret combination of ingredients. We like to keep it simple!

Ingredients:
  • 8 oz. Sharp Cheddar cheese, shredded
  • 1/2-3/4 cups Mayonnaise  (I prefer Hellman’s light; Rachael prefers Dukes' regular. Use your preferred brand.)
  • 1 Tablespoon Worcestershire sauce
  • Cayenne Pepper to taste  (We are of the personal opinion that this is the key ingredient in our spread and use 1/8-1/4 teaspoon depending on who is "taste-testing" that day.
Directions:
  1. Combine cheese and mayonnaise, using enough mayonnaise to make a good spreading consistency.
  2. Add Worcestershire sauce and cayenne pepper.
Serve cold on fresh, white bread, or a healthier bread like whole wheat; for a special treat, grill the sandwich. Delicious with  crackers, melba toast, and veggies such as celery! Be sure to remove the crust from the bread if you are serving these for a special event.
