Cheryl's Broccoli Casserole

By Every Tradition · Every Tradition
Our mom's cousin, Cheryl, has added to our dinner table with this recipe for broccoli casserole. Many in our family like plain broccoli with cheese sauce. More of us love this broccoli casserole. It is a great accompaniment with ham, roast, and of course, Turkey at Thanksgiving.

Cheryl's Broccoli Casserole
Ingredients:

  • 2 Lb frozen broccoli cuts
  • 2 eggs, beaten
  • 2 Tbsp minced onion
  • 1 c mayonnaise (Hellman's regular is best)
  • 1 can cream of celery soup
  • 1 can French onion rings (or any brand)
  • 1 c grated sharp cheddar cheese
  • salt and pepper to taste

Instructions:

  1. Boil broccoli 5 minutes; drain.
  2. Combine remaining ingredients, excluding the onion rings.
  3. Pour into greased 9x13 or similar shallow casserole dish.
  4. Bake at 350 for 45 minutes.
  5. Top with onions for the last five minutes, being careful not to overbrown.

This recipe is a great side dish to go with ham, roast, or whatever you like!
