Summer Garden: Holiday Squash Casserole

By Every Tradition · Every Tradition

The produce is producing abundantly around our area! In my garden, we have lots of squash coming in. Lots! Here is one of our favorite ways to prepare squash:

Ingredients:
  • 1 lb squash yellow crookneck (or straightneck), sliced, cooked and drained
  • ¼ c finely chopped onion (optional)
  • 2 eggs, beaten
  • 1 c grated cheese
  • 3 Tbsp margarine or butter, melted
  • salt, pepper, paprika to taste
Directions:
  1. Slightly mash cooked squash (be sure it's drained well!)
  2. Add onion, eggs, cheese and butter to the cooked squash and stir together
  3. Season with salt, pepper and sugar to taste.
  4. Pour into greased casserole and top with remaining cheese.
  5. Sprinkle with paprika.
  6. Bake at 400 degrees for 20 minutes, or until set
