Friend Friday: Cheesy Chicken Corn Chowder

By Every Tradition · Every Tradition
It's soup weather time! This Cheesy Chicken Corn Chowder is one of my personal favorites. The recipe was shared with us by our dear friend, Lisa Bundrick. When Lisa shares a recipe, it is sure to become a favorite in our household!

Cheesy Chicken Corn Chowder
Ingredients:
  • 8 Tbsp butter
  • 2 c shredded carrots
  • 1/2 c chopped onion
  • 1/2 c flour
  • 3 c chicken broth
  • 3 c milk
  • 2 c diced cooked chicken
  • 1 tsp Worcestershire
  • 8 oz shredded cheddar cheese
  • 2 Tbsp red wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp curry powder
  • 1 c half and half
  • 1 c corn (fresh or frozen)
Directions:
  1. Melt butter in large pan.
  2. Add carrots and onion. Saute until tender.
  3. Blend in flour.
  4. Add broth and milk.
  5. Cook and stir until thick and smooth.
  6. Add remaining ingredients and heat until warm.
  7. Serve with crusty bread and enjoy!
*As with most soup recipes, I don't always follow the exact amounts for the "good stuff" (ie. chicken, carrots and corn for this recipe). Feel free to adjust amounts to your liking. That's what's so fun about soup/chowder/chili, etc.!
