Key Lime Pie

By Every Tradition · Every Tradition
Several years ago, a sweet lady named Wanna Mae Davis invited Sarah and me over for lunch. She made the most delicious sandwiches for us, and then pulled out dessert- Key Lime Pie. It was delicious, so I asked for the recipe. (And many of you know I LOVE asking for recipes!) To my surprise, it was right off the juice bottle!

The secret: Nellie & Joe's Famous Key West Lime Juice! You can get it at most grocery stores where we live: BI-LO and Ingles are the places I usually go to buy it! And it's such a simple recipe!

Now, if you are like me, you like the idea of a "homemade" graham cracker pie crust. Note, if you are going for presentation, homemade will definitely taste better, but doesn't present quite as well as the pre-made crusts you can buy at the grocery store. However, my theory is if it looks OK and is delicious, people won't care. Now, if it looks delicious and tastes blah, that's when people DO care! So, I go for taste, and use the crust recipe stolen from Taste of Home.

Enjoy- perfect for a light dessert, complete with some heavy whipped cream!

Nellie & Joe's Key Lime Pie
           9" graham cracker pie crust
14 oz. can of sweetened condensed milk
3 egg yolks (whites not used)
½ cup Nellie & Joe's Key West Lime Juice
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350º for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream, or meringue, and garnish with lime slices.

Graham Cracker Crust [Taste of Home]
    1 sleeve Graham Crackers, crushed
    1/4 C sugar
    1/3 cup Butter, melted

In a small bowl, combine the crumbs and sugar; add butter and blend well. Press onto the bottom and up the sides of an ungreased 9-in. pie plate.
Refrigerate for 30 minutes before filling, or bake at 375° for 8-10 minutes or until crust is lightly browned. Cool on a wire rack before filling. Yield: 1 pie crust (9 inches).
